Inspired by Hugh Fernley Whitingstall and his Fish Fight, this week I decided to have a go at traditional fish and chips, but using a “politically correct” fish. First was to find out what was available, cheap and ticked the sustainability box. A trip to Ramus Seafoods in Ilkley provided the answer.
