The Secret Supper Club LogoWatch out for more local foodie fun on Saturday the 19th of February when Olly Smith and team will be helping us put together a feast in a rather unusual location at Malham Tarn near Skipton.  The meal features lots of Yorkshire Food & the Producers.

The Secret Supper Club from Malham Tarn will be screened on Channel 4 on February the 19th at 3.50pm and will be available on C4oD on demand to watch at your leisure on your computer.

Campervan Man Martin Dorey Gordale Scar MalhamOne Man & his Campervan starts on BBC2 at 6.30pm on the 7th Feb, and every week night for a fortnight will see Martin Dorey travel the length and breadth of the UK in his trusty VW campervan sampling some of the best local food and simple campfire style cooking.  Watch out for his visit to Malham, Gordale Scar on the 10th of Feb where he cooks up a treat for me with some enormous eggs and our own Yorkshire Chorizo.

Sausage Meat Balls Recipe

Wildman’s Week – Adventures in food from Chris Wildman

This is my Mum’s recipe and is simply the best Sausagemeat ball recipe, great hot or cold.  I suggest you make extra and hide them so you can have some leftover cold on boxing day!  These are so good they should not be restricted to Xmas.

Ingredients:-

  • 1lb/500g pork sausagemeat (or just remove skin from some sausages)
  • 1 grated carrot
  • 1 grated onion
  • 1 grated apple
  • 2 sticks grated celery
  • 1 fresh egg
  • small packet Paxo sage & onion stuffing
  • salt & pepper
  • plain flour if required

Method:-

  • make up the paxo stuffing mix with water as directions on packet
  • combine all other prepared ingredients with the stuffing and add a little flour if too wet
  • make into small balls with an ice cream scoop or just use your hands
  • space out on a tray (leave a gap as they will spread out)
  • cook in oven for 20 mins or until cooked through, I like to slightly over cook them until a deep brown colour
  • keep warm and serve with your Xmas Dinner/Lunch
I would double or treble the recipe at least and reserve some for boxing day, in our house half get eaten as soon as they come out of the oven by various members of the family pinching one as they pass through the kitchen! be warned…

Christmas Lunch at Skipton Stoves

Popped into see Ian and team from Napier’s cook up a quick Christmas Lunch on a fantastic Stove at Skipton Stoves & Ranges on Snaygill Industrial Estate.  On the menu, turkey breast stuffed with Ian’s special stuffing and covered in bacon, Brussel sprouts with toasted almonds & Yorkshire Chorizo, roast winter veg, pollenta coated roast potatoes cooked in goose fat & rich pan gravy.  Delicious…Skipton Stoves Christmas Lunch

Oyster Dredging & Seafood

Dressed Crab & LobsterOne of the highlight’s of my year & a truly fantastic experience this week when I visited Colchester Oyster Fishery at Pyefleet Quay on Mersea Island, Essex.  The day started with an icy but stunning dawn over the Dales followed by a long drive south, rewarded with the best seafood lunch I have ever eaten, Native Oysters, Rock Oysters, Razor Clams, hand dived scallops, dressed crab & lobster washed down with a cold Chardonnay.
After lunch a tour of the fishery and a trip out on the boat oyster dredging, returning to the quay to witness the perfect sunset over Pyefleet Creek. Sunset at Colchester Oyster Fishery, Mersea Island, Pyefleet Creek

Wild Foraging – Blackthorn Sloes

Foraging again for Blackthorn Sloes today with Ollie Smith from Saturday Kitchen & Iron Chef, this time it’s for C4 Secret Supper Club and a spot of filming around the Dales.  Lots of fantastic food
& superb local suppliers presented there bounty of fresh produce this morning but you will have to wait to see what is in the final meal on Channel 4 at the end of January!  We have no idea yet!
So far this is the only clue to the food and possible recipes but will try and give more details later.

Apple Scrumping

I’m on the scrounge for Apples and boy what a crop we have locally, managed to scrump lots and lots of apples ready for the community cider making day down at Naylor’s Beer Yorkshire ApplesEmporium in Crosshills on Saturday the 9th October from 10am, hopefully we can make some quality Malhamdale Cider to try out on Super Cider Sunday sometime in the new year!
